make food: Cosy leek and potato soup

Cosy ‘cause it’s the type of soup that’s perfect for a cold night in, especially when it’s been snowing like it has in London recently. We had so much snow overnight that none of my flatties could get into work as the buses, tubes and trains all stopped running. So it was button down the hatches and make like Martha Stewart. We even ended up with a family of five giant snowmen in the garden built by some of the neighbour’s kids.

In a heavy-bottomed saucepan, with a couple of glugs of olive oil, salt and pepper, sweat one large chopped onion, 4 leeks, chopped into 3 centimetre slices, and about 4 large diced potatoes.

Add 850ml good veggie stock, and a couple of bay leaves, and simmer for 15 minutes, until potatoes are soft.

Remove bay leaves and blend as chunky or smooth as you like.

Add about 100ml milk – a little more or less depending on how thick you’d like the soup.

Heat gently, and serve crispy bacon pieces and chopped flat-leaf parsley, and with crusty bread on the side.

Serves 4.
