This is a great recipe to make the most of left over mashed potatoes – very simple and a definite crowd pleaser.
Add about 3 cups of cold mashed potato to a large bowl
In a medium sized frying pan heat a couple of tablespoons of olive oil and sweat one finely chopped red onion and a couple of cloves of garlic. Add to the potato
Add a couple of cans of tuna – make sure you drain the water or oil first
Mix in the zest of one lemon, a handful of chopped coriander and a sprinkle of chilli flakes. Season with salt and pepper
Shape into cakes, dip in beaten egg and coat with breadcrumbs
Fry in olive oil on a medium heat until golden
Serve immediately with sour cream, sweet chilli sauce and a lemon wedge.
